    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes under cold water, dry them, and poke several holes in each potato with a fork.

    Season and Bake

    Rub the potatoes with olive oil, salt, and pepper. Place them directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.

    Cook the Bacon

    While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble into small pieces.

    Assemble the Loaded Potatoes

    Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a slit down the center of each potato, gently push the ends to open it up.
