    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips, about 1/2 inch wide.

    Soak the Fries

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat dry.

    Fry the Potatoes

    In a large pot, heat oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, drizzle with truffle oil, and sprinkle with salt, pepper, and chopped chives. Toss to coat evenly.
