    Prepare the Potatoes

    Wash and peel the Russet potatoes, then cut them into thick strips to create hand-cut fries.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Make the Garlic Aioli

    In a bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix until smooth and set aside.

    Heat the Oil

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add the soaked fries to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Season and Serve

    Sprinkle the fries with salt and chopped fresh chives. Serve hot with garlic aioli on the side.
