Prepare the Ahi Tuna
Dice the ahi tuna into small cubes and place it in a mixing bowl.

Mix the Ingredients
Add the finely chopped green onion, sesame oil, soy sauce, lime juice, and kosho to the diced tuna. Mix gently to combine.

Chill the Mixture
Cover the bowl and refrigerate the mixture for at least 15 minutes to allow the flavors to meld.

Prepare the Sushi Rice
Cook sushi rice according to package instructions. Once cooked, let it cool slightly and then form into small, crispy rice cakes.

Place a crispy sushi rice cake on a serving plate. Spoon the chilled tuna mixture on top and garnish with a dollop of tobiko caviar.
