Directions

  1. 1

    Prepare Sweet Potatoes

Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork and roast them in the oven for about 45 minutes or until tender. Let cool, peel, and mash until smooth.

  2. 2

    Make the Crust

In a bowl, combine graham cracker crumbs, melted butter, and cinnamon. Press the mixture into the bottom of a 9-inch springform pan to form a crust.

  3. 3

    Mix the Filling

In a large mixing bowl, beat the cream cheese until smooth. Add the roasted sweet potato, granulated sugar, maple syrup, vanilla extract, eggs, nutmeg, and salt. Mix until well combined and smooth.

  4. 4

    Assemble the Cheesecake

Pour the filling over the crust in the springform pan. Smooth the top with a spatula.

  5. 5

    Bake

Bake in the preheated oven at 325°F (160°C) for about 60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

  6. 6

    Chill and Serve

Refrigerate the cheesecake for at least 4 hours or overnight. Release the cheesecake from the springform pan, slice, and serve with additional maple syrup if desired.
