Cook the Venison
In a separate pan, cook the ground venison over medium-high heat until browned, breaking it apart as it cooks. Season with salt and black pepper.

In a large mixing bowl, combine the cooked venison, caramelized leeks, white sauce, ricotta, and fresh herbs. Mix until well combined.

In a baking dish, spread the venison and leek mixture evenly. Top with shredded mozzarella and smoked gouda cheese.

Preheat your oven to 375°F (190°C). Bake the dish for about 20-25 minutes or until the cheese is bubbly and golden brown.
