Prepare the Chicken
Preheat the grill to medium-high heat. Rub the chicken breasts with olive oil, salt, and black pepper. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from the grill and let rest.

Make the Goat Cheese Spread
In a small bowl, combine the roasted garlic and goat cheese. Mix until smooth and well combined. Set aside.

Prepare the Vegetables
Slice the cucumber and red onion thinly. Chop the romaine lettuce into bite-sized pieces. Halve the Kalamata olives if desired.

Make the Vinaigrette
In a small bowl, whisk together the red wine vinegar, honey, and Dijon mustard. Season with salt and pepper to taste.

Assemble the Sandwich
Slice the ciabatta bread in half. Spread a generous amount of the goat cheese mixture on each half. Layer with grilled chicken, cucumber slices, red onion, Kalamata olives, and romaine lettuce. Drizzle with the red onion vinaigrette.
