Caramelize the Onions
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes.

Sauté the Mushrooms
In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the sliced mushrooms and season with salt and pepper. Sauté until they are soft and browned, about 5-7 minutes.

Toast the Ciabatta
While the ribeye is cooking, slice the ciabatta rolls in half and toast them lightly on a grill or in a toaster.

Assemble the Steak Sammy
Spread Duke's mayonnaise on the bottom half of each toasted ciabatta roll. Layer the cooked ribeye, sautéed mushrooms, caramelized onions, and top with American cheese. Drizzle the beer cheese sauce over the top and close the sandwich with the other half of the ciabatta.

Cut the sandwiches in half and serve while warm.
