Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the pork belly skin with a sharp knife in a crosshatch pattern, being careful not to cut into the meat. This will help the fat render and create crispy cracklins.

Season the Pork Belly
Rub the pork belly generously with salt, black pepper, and garlic powder. If you want a dill pickle flavor, also rub in the dill pickle seasoning.

Roast the Pork Belly
Place the pork belly on a baking sheet, skin side up. Roast in the preheated oven for about 2-3 hours, or until the skin is golden brown and crispy, checking occasionally to ensure it doesn't burn.

Cool and Cut
Once the pork belly is crispy, remove it from the oven and let it cool for about 15 minutes. Cut into bite-sized pieces.

Enjoy the cracklins plain, or toss them in additional seasoning for a dirty flavor. If using dill pickle seasoning, serve with dill pickle slices on the side.
