    Preparing the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to form fries.

    Soaking the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch, which helps achieve crispiness.

    Drying the Fries

    Drain the water and pat the fries dry with paper towels to ensure they fry properly.

    Heating the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Frying the Fries

    Carefully add the fries in batches to the hot oil and fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

    Seasoning

    While the fries are still hot, sprinkle with salt and toss in white vinegar if desired. Add optional seasonings to taste.
