    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thick fries and soak them in cold water for at least 30 minutes to remove excess starch.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and let them drain on paper towels. Once cooled, chop them into small pieces.

    Fry the Potatoes

    Heat the oil in a deep fryer or large pot to 350°F (175°C). Drain the soaked potatoes and pat them dry with paper towels. Carefully add the fries to the hot oil in batches and fry until golden brown, about 5-7 minutes. Remove and drain on paper towels.

    Season the Fries

    In a large mixing bowl, combine the hot fries, chopped bacon, minced garlic, dirty seasoning, salt, and pepper. Toss well to ensure all fries are coated.

    Garnish and Serve

    Transfer the seasoned fries to a serving platter, top with chopped cilantro, and serve immediately.
