Preparation and Assembly

    Make the Bao Buns

    In a bowl, mix the warm water, sugar, and yeast. Let it sit for 5 minutes until frothy. In a large bowl, combine the flour, baking powder, and salt. Add the yeast mixture and knead until smooth. Let the dough rise in a warm place for about 1 hour or until doubled in size.

    Shape the Buns

    Once the dough has risen, punch it down and divide it into 12 equal pieces. Shape each piece into a ball and flatten slightly. Place on parchment paper squares and let rise for another 30 minutes.

    Cook the Bao Buns

    Steam the buns in a steamer for about 10-12 minutes until fluffy and cooked through. Set aside.

    Prepare the Remoulade

    In a bowl, mix the mayonnaise, hot sauce, and lemon juice. Adjust seasoning to taste.

    Fry the Bao Buns

    Heat vegetable oil in a deep pan over medium heat. Fry the steamed buns until golden brown and crispy, about 2-3 minutes on each side.

    Assemble the Buns

    Slice each fried bao bun open and fill with crabmeat, pickled carrots, and pickled red onion. Drizzle with the caramelized remoulade before serving.
