Brine the Chicken Wings
In a large bowl, combine beer, water, kosher salt, brown sugar, black peppercorns, crushed garlic cloves, and bay leaves. Stir until salt and sugar dissolve. Add chicken wings to the brine, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

Prepare the Grill or Oven
Preheat your grill to medium-high heat or your oven to 425°F (220°C).

Remove and Dry the Wings
After brining, remove the chicken wings from the brine and pat them dry with paper towels.

Season the Wings
If desired, rub the chicken wings with dry rub seasoning for extra flavor.

Cook the Wings
Grill the wings for about 20-25 minutes, turning occasionally until they are crispy and cooked through. If baking, place on a baking sheet and bake for about 40-45 minutes, or until crispy, flipping halfway through.

Glaze the Wings
During the last 5 minutes of cooking, brush the wings with buffalo or teriyaki sauce to coat.

Remove wings from heat and let them rest for a few minutes. Serve hot with crumbled bacon, blue cheese, dill pickles, and pickled carrots on the side.
