Prepare the Base

    Whisk the Cream and Milk

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Whisk together until the sugar is dissolved.

    Heat the Mixture

    Place the saucepan over medium heat and cook until the mixture is warm, but not boiling, stirring occasionally.

    Prepare the Egg Yolks

    In a separate bowl, whisk together the egg yolks until they are light and frothy.

    Temper the Egg Yolks

    Slowly pour about half of the warm cream mixture into the bowl with the egg yolks while whisking constantly to temper the yolks.

    Combine and Heat Again

    Pour the egg yolk mixture back into the saucepan with the remaining cream mixture. Cook over medium heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon (about 5-7 minutes).

    Add Vanilla and Salt

    Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt.

Chill and Churn

    Cool the Mixture

    Transfer the mixture to a bowl and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours or overnight.

    Churn the Ice Cream

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Add Mix-ins (Optional)

    If desired, during the last few minutes of churning, add chocolate chips or chopped nuts.

    Freeze the Ice Cream

    Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.
