Method
Prep the Patties

Prepare the Beef
In a mixing bowl, combine the ground beef with salt and black pepper. Mix until just combined, being careful not to overwork the meat.

Form the Patties
Divide the meat mixture into two equal portions and shape them into patties, slightly larger than the buns to allow for shrinkage while cooking.
Cook the Patties

Cook First Side
Cook the patties for about 3-4 minutes on one side until a crust forms, then flip them.

Cook with Cheese
After flipping, place a slice of American cheese on each patty and cook for an additional 2-3 minutes until the cheese melts and the patties are cooked to your desired doneness.
Prepare the Aioli

Make Dijon Aioli
In a small bowl, mix together the Dijon mustard and mayonnaise until well combined. Set aside for serving.
Assemble the Burger

Spread Aioli
On the bottom half of each bun, spread a generous amount of the Dijon aioli.

Add the Patties
Place the cooked patties with melted cheese on top of the aioli-covered buns.

Add Toppings
Layer the pickles, onions, shredded lettuce, and tomato slices on top of the patties.

Complete the Burger
Top with the other half of the brioche bun and press down gently.
Serve

Serve the smashburger with your choice of a regular side such as fries or onion rings.
