    Prepare the Ingredients

    Gather all the ingredients. Make sure the corned beef is sliced thinly, the sauerkraut is drained, and the Swiss cheese is ready to use.

Assembly

    Assemble the Sandwich

    Take two slices of light marble rye bread. Spread 1 tablespoon of Thousand Island dressing on each slice. Layer half of the corned beef evenly on one slice, followed by half of the sauerkraut, and then two slices of Swiss cheese.

    Complete the Sandwich

    Top with another slice of bread, spread another tablespoon of Thousand Island dressing on top, and repeat the layering process with the remaining ingredients (corned beef, sauerkraut, and Swiss cheese). Finish with the last slice of bread.

Cooking

    Grill the Sandwich

    Heat a skillet or griddle over medium heat. Butter the outside of the sandwich lightly. Place the sandwich on the skillet and grill for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.

Serving

    Serve the Reuben

    Remove the sandwich from the skillet, let it cool slightly, then slice it in half. Serve with your choice of a regular side such as potato chips, pickles, or coleslaw.
