Prepare the Dry Rub

    Mix the Dry Rub

    In a small bowl, combine the garlic powder, onion powder, dried oregano, dried basil, red pepper flakes, salt, and black pepper. Stir until well mixed.

Prepare the Steak

    Season the Steak

    Pat the flat iron steak dry with paper towels. Rub the olive oil all over the steak, then generously apply the dry rub mixture to both sides of the steak, pressing it into the meat.

    Let it Rest

    Allow the seasoned steak to sit at room temperature for about 30 minutes to let the flavors meld.

Cook the Steak

    Preheat the Grill or Pan

    Preheat a grill or cast-iron skillet over medium-high heat until hot.

    Cook the Steak

    Place the steak on the hot grill or skillet. Cook for 4-5 minutes on one side, until a nice crust forms. Flip the steak and cook for an additional 3-4 minutes for medium-rare, or longer if desired.

    Rest the Steak

    Remove the steak from the heat and let it rest for 5-10 minutes before slicing. This helps retain the juices.

Prepare the Sides

    Roast the Vegetables

    Toss the vegetables with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven at 400°F (200°C) for 20-25 minutes or until tender and slightly caramelized.

    Make the Mashed Potatoes

    Boil peeled and chopped potatoes in salted water until fork-tender. Drain and mash with butter, milk, salt, and pepper to taste.

Serve

    Slice the rested steak against the grain and serve it alongside the roasted vegetables and mashed potatoes.
