First Premium Side - Garlic Mashed Potatoes

Second Premium Side - Roasted Seasonal Vegetables

Method

First Premium Side - Garlic Mashed Potatoes

  1. 1

    Prepare the Potatoes

Peel and chop the Russet potatoes into equal-sized chunks to ensure even cooking.

  2. 2

    Boil the Potatoes

Place the chopped potatoes in a large pot, cover with water, and add 1 tsp of salt. Bring to a boil over medium-high heat and cook until fork-tender, about 15-20 minutes.

  3. 3

    Prepare the Garlic

While the potatoes are boiling, peel and finely mince the garlic cloves.

  4. 4

    Make the Mashed Potatoes

Once the potatoes are cooked, drain them and return them to the pot. Add butter, heavy cream, minced garlic, black pepper, and additional salt to taste. Mash until smooth and creamy.

  5. 5

    Garnish and Serve

Chop the chives and sprinkle them over the mashed potatoes before serving.

Second Premium Side - Roasted Seasonal Vegetables

  1. 6

    Prepare the Vegetables

Wash, peel (if necessary), and chop the carrots, zucchini, and red bell pepper into even-sized pieces.

  2. 7

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  3. 8

    Season the Vegetables

In a large mixing bowl, toss the chopped vegetables with olive oil, salt, black pepper, and dried thyme until well coated.

  4. 9

    Roast the Vegetables

Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized, stirring halfway through.

  5. 10

    Serve Warm

Remove from the oven and serve the roasted seasonal vegetables warm as a premium side.
