Chicken Preparation

Marinate the Chicken
In a bowl, combine olive oil, salt, black pepper, and garlic powder. Add the chicken breasts and coat them evenly in the marinade. Let them marinate for at least 30 minutes.

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.

Prepare the Focaccia
Slice the focaccia bread horizontally to create a top and bottom piece for each sandwich.

Spread Pesto
Spread 1 tablespoon of pesto sauce on each slice of focaccia.

Layer Ingredients
On the bottom slice of focaccia, layer sliced grilled chicken, fresh mozzarella slices, spinach, and tomato slices. Top with the other slice of focaccia.

Grill the Panini
Heat a panini press or a skillet over medium heat. Place the assembled sandwich in the press or skillet and grill for about 3-5 minutes, or until the bread is golden brown and the cheese is melted.
