Base Ingredients

Method

Preparation

  1. 1

    Cook the Bacon

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and drain on paper towels, leaving the bacon fat in the pot.

  2. 2

    Sauté the Vegetables

Add the diced onion and celery to the pot with the bacon fat. Sauté for about 5 minutes until the onion is translucent.

  3. 3

    Add Potatoes and Broth

Diced potatoes should be added to the pot along with chicken broth. Bring to a boil, then reduce heat and let simmer for 15 minutes until the potatoes are tender.

  4. 4

    Combine Clams and Seasonings

Add the clams, thyme, bay leaf, salt, and black pepper to the pot. Stir well and let simmer for another 5 minutes.

  5. 5

    Finish with Cream

Remove the bay leaf, then stir in the heavy cream and butter. Heat through, but do not boil.

  6. 6

    Serve

Crumble the cooked bacon and sprinkle it on top of the chowder before serving.
