Lobster Filling

Prepare the Lobster Filling
In a medium bowl, combine the fresh lobster meat, mayonnaise, finely chopped celery, lemon juice, chopped chives, salt, and black pepper. Gently mix until all ingredients are well combined. Set aside in the refrigerator to chill while preparing the rest of the meal.

Toast the Rolls
In a skillet or griddle over medium heat, melt the unsalted butter. Once melted, add the split-top New England rolls, cut side down, and toast them until they are golden brown and crispy, about 2-3 minutes. Remove from heat and set aside.
Coleslaw

Make the Coleslaw
In a large bowl, combine the shredded green cabbage and carrots. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage and carrots, and mix until well coated. Refrigerate for at least 30 minutes before serving.
French Fries

Prepare the French Fries
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the cut potatoes in batches and fry until golden brown and crispy, about 5-7 minutes. Remove fries with a slotted spoon and place them on paper towels to drain excess oil. Sprinkle with salt to taste.

Assemble the Lobster Rolls
Take the toasted rolls and fill them generously with the chilled lobster filling. Serve immediately with a side of coleslaw and hot, crispy French fries.
