Preparation

    Prepare the Chicken

    Season the grilled chicken breast with salt and pepper. Grill over medium heat for about 6-7 minutes on each side until cooked through. Once done, let it rest for a few minutes before slicing it into bite-sized pieces.

    Chop the Vegetables

    While the chicken is grilling, wash and chop the lettuce, diced the tomato, and finely chop the red onion. Slice the jalapenos to your preference (removing seeds for less heat).

    Prepare the Cheese

    In a bowl, combine the shredded cheddar and Monterey Jack cheese. Mix well and set aside.

    Layer the Nachos

    On a large platter or baking sheet, spread out the tortilla chips in an even layer. Top evenly with the sliced grilled chicken, followed by the mixed cheese.

    Add Vegetables

    Sprinkle the chopped lettuce, diced tomato, red onion, and jalapenos over the cheese layer.

    Melt the Cheese

    Place the assembled nachos in a preheated oven at 180°C (350°F) for about 5-7 minutes or until the cheese is melted and bubbly.

    Serve the Nachos

    Remove the nachos from the oven and let them cool for a minute. Top with dollops of sour cream, guacamole, and salsa before serving warm.
