Marinade

Method

Marinade Preparation

  1. 1

    Create the Marinade

In a large bowl, combine the Greek yogurt, olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well until all ingredients are thoroughly incorporated.

  2. 2

    Marinate the Lamb

Add the lamb cubes to the marinade and ensure they are fully coated. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, preferably overnight for best flavor.

Skewer Preparation

  1. 3

    Prepare the Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking. If using metal skewers, this step is not necessary.

  2. 4

    Assemble the Kebabs

Thread the marinated lamb cubes onto the skewers, alternating with pieces of bell pepper and wedges of red onion. Leave a little space between each piece for even cooking.

Cooking

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are hot and covered with white ash.

  2. 6

    Grill the Kebabs

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and reaches your desired level of doneness (145°F for medium-rare).

  3. 7

    Rest and Serve

Once cooked, remove the kebabs from the grill and let them rest for 5 minutes. Serve hot with your favorite side dishes or dips.
