    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for another minute.

    Cook the Spinach

    Add the chopped spinach to the skillet and cook until wilted, stirring frequently, which should take about 5-7 minutes. Remove from heat and let it cool slightly.

    Combine Filling Ingredients

    In a large mixing bowl, combine the cooked spinach mixture, crumbled feta cheese, beaten egg, chopped dill, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Assembling the Spanakopita

    Prepare the Phyllo

    Preheat your oven to 180°C (350°F). Lay out the phyllo pastry sheets on a clean surface and cover them with a damp towel to prevent them from drying out.

    Layer the Phyllo

    Take one sheet of phyllo and brush it lightly with melted butter. Place another sheet on top and brush it again. Repeat this process until you have 4-5 layers.

    Add Filling

    Spoon a portion of the spinach filling along one edge of the layered phyllo. Roll the phyllo over the filling to create a log shape, tucking in the edges as you go.

    Place in Baking Dish

    Transfer the rolled spanakopita to a greased baking dish. Brush the top with more melted butter. Repeat the process with the remaining phyllo and filling.

Baking

    Bake the Spanakopita

    Bake in the preheated oven for 30-35 minutes, or until golden brown and crispy on top.

    Remove from the oven and let cool for a few minutes before slicing. Serve warm and enjoy!
