Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Mix well to create a marinade.

  2. 2

    Coat the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure that each fillet is well-coated. Cover with plastic wrap and refrigerate for at least 30 minutes.

Grilling the Salmon

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat, around 400°F (200°C).

  2. 4

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 6-8 minutes per side, or until the salmon flakes easily with a fork.

Preparing the Vegetables

  1. 5

    Season the Vegetables

In a large bowl, toss the sliced zucchini, bell peppers, and asparagus with olive oil, salt, and black pepper until evenly coated.

  2. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.

Serving

  1. 7

    Plate the Dish

Once the salmon and vegetables are cooked, remove them from the grill. Serve the grilled salmon alongside the grilled seasonal vegetables on a platter.

  2. 8

    Enjoy

Garnish with lemon wedges if desired and enjoy your grilled salmon with seasonal vegetables!
