Toast the Pita
Preheat the oven to 375°F (190°C). Cut the pita bread into triangles and place them on a baking sheet. Bake for 5-7 minutes or until golden and crispy.

Combine the Salad Ingredients
In a large salad bowl, combine the mixed greens, chopped cucumber, tomatoes, red onion, Kalamata olives, and pepperoncini. Toss gently to combine.
Tzatziki Preparation

Combine Ingredients
In a medium bowl, mix the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and fresh dill until well combined.

Chill
Cover the tzatziki and refrigerate for at least 30 minutes to allow the flavors to meld.

Blend the Dressing
In a blender or food processor, combine the feta cheese, olive oil, red wine vinegar, Dijon mustard, oregano, salt, and black pepper. Blend until smooth and creamy.

Taste and Adjust
Taste the dressing and adjust seasoning if necessary. Set aside.
Serving

Assemble the Salad
Drizzle the Mediterranean feta dressing over the salad and toss gently to coat. Serve with tzatziki on the side and crispy pita triangles.
