Marinade Preparation

    In a medium bowl, whisk together the olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper until well combined.

    Marinate the Chicken

    Cut the chicken breasts into 2-inch cubes and add them to the marinade. Mix well to ensure all pieces are coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.

Skewering and Grilling

    Prepare the Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. This step is optional for metal skewers.

    Thread the marinated chicken cubes onto the skewers, alternating with pieces of bell peppers, red onion, and zucchini. Aim for about 4-5 pieces of chicken per skewer, interspersed with veggies.
