Preparing the Coleslaw

Mix Coleslaw Ingredients
In a large bowl, combine shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
Preparing the Cajun Ranch Sauce

Combine Ingredients
In a small bowl, mix together ranch dressing and Cajun seasoning until well combined. Set aside.
Frying the Haddock

Heat Oil
In a large skillet, heat oil over medium-high heat until hot but not smoking.

Fry the Haddock
Carefully place the breaded haddock fillets in the hot oil. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Tacos

Warm Tortillas
In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Place a piece of fried haddock into each warm tortilla. Top with a generous amount of coleslaw, drizzle with Cajun ranch sauce, and sprinkle with diced jalapenos and fresh cilantro.
