    Prepare the Crostini

    Preheat the oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices. Place the slices on a baking sheet and brush both sides with olive oil. Bake for about 10-12 minutes, turning halfway through, until golden brown and crispy.

    Caramelize the Onions

    In a large skillet, melt the butter over medium heat. Add the sliced yellow onions and sprinkle with salt and sugar. Cook the onions slowly, stirring frequently, for about 30-40 minutes until they are deeply golden and caramelized.

    Prepare the Soup Base

    In a large pot, combine the caramelized onions and beef broth. Add thyme, bay leaf, and black pepper. Bring the mixture to a simmer over medium heat and let it cook for 20-25 minutes to allow the flavors to meld together.

Cheese Topping

    Melt the Cheese

    Ladle the hot soup into oven-safe bowls and place a generous amount of provolone and Swiss cheese on top of each. Place the bowls under the broiler for 2-3 minutes until the cheese is bubbly and golden brown.

    Remove the bowls from the oven with caution, and serve hot with the crostini on the side.
