Fish Preparation

    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Slowly whisk in the beer until you achieve a smooth batter. Let it rest for about 15 minutes.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the temperature is correct for frying.

    Batter the Haddock

    Dip each haddock fillet into the batter, coating it thoroughly. Allow excess batter to drip off.

    Fry the Fish

    Carefully place the battered fillets into the hot oil, frying them in batches to avoid overcrowding. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove from oil and drain on paper towels.

French Fry Preparation

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips to form fries. Rinse under cold water to remove excess starch.

    In a separate pot, heat the vegetable oil to 350°F (175°C). Fry the potato strips in batches until golden and crispy, about 4-6 minutes. Remove from oil and drain on paper towels, then sprinkle with salt.

Tartar Sauce Preparation

    Make the Tartar Sauce

    In a small bowl, combine mayonnaise, chopped pickles, chopped capers, and lemon juice. Mix well and season with salt and black pepper to taste. Chill until ready to serve.
