Mousse Base

Whipped Cream

Method

Preparing the Mousse Base

  1. 1

    Melt Chocolate and Butter

In a heatproof bowl, combine the semi-sweet chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

  2. 2

    Whisk Eggs and Sugar

In a separate bowl, whisk the large eggs and granulated sugar together until the mixture is pale and slightly thickened, about 2-3 minutes.

  3. 3

    Combine Mixtures

Slowly add the melted chocolate mixture to the egg mixture, stirring gently to combine. Add the vanilla extract and mix until fully incorporated. Set aside.

Preparing the Whipped Cream

  1. 4

    Whip the Cream

In a large mixing bowl, pour the heavy cream and add the powdered sugar and vanilla extract. Using an electric mixer, whip the cream until soft peaks form.

  2. 5

    Fold in Whipped Cream

Gently fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the air in the cream. The mixture should be light and fluffy.

Chilling and Serving

  1. 6

    Chill the Mousse

Transfer the mousse into individual serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

  2. 7

    Serve

Once set, serve the chocolate mousse chilled. Optionally, garnish with additional whipped cream or chocolate shavings.
