Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C) and grease four ramekins with butter, then dust with flour.

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) until smooth. Stir occasionally.

    Whisk Eggs and Sugar

    In a separate mixing bowl, whisk together the granulated sugar, eggs, egg yolks, and vanilla extract until it becomes thick and pale in color.

    Combine Mixtures

    Once the chocolate mixture is melted and slightly cooled, pour it into the egg mixture. Fold gently until combined.

    Add Dry Ingredients

    Gently fold in the all-purpose flour and a pinch of salt until just combined. Be careful not to overmix.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

Baking

    Bake the Cakes

    Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is still soft.

    Cool Slightly

    Remove the ramekins from the oven and let them cool for 1-2 minutes. This helps to set the edges while keeping the center molten.

Serving

    Plate the Cakes

    Carefully invert each ramekin onto a plate. Gently tap the bottom to release the cake and lift the ramekin away.

    Add Ice Cream and Berries

    Serve immediately with a scoop of vanilla ice cream on top and fresh berries on the side, if desired.
