Method

Preparation

  1. 1

    Prepare the Chicken

Season the chicken breasts with salt and black pepper on both sides.

  2. 2

    Chop the Vegetables

Finely chop the shallots and mince the garlic. Slice the Portobello mushrooms.

Cooking

  1. 3

    Sauté the Chicken

In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

  2. 4

    Cook the Vegetables

In the same skillet, add the remaining tablespoon of butter. Once melted, add the chopped shallots and sauté for 2 minutes until translucent. Add the minced garlic and sliced Portobello mushrooms, cooking for an additional 4-5 minutes until the mushrooms are tender.

  3. 5

    Add the Wine and Broth

Pour in the Marsala wine and chicken broth. Bring the mixture to a boil, scraping any browned bits from the bottom of the skillet. Let it simmer for about 5 minutes until the sauce reduces slightly.

  4. 6

    Combine and Finish

Return the chicken to the skillet, spooning the sauce over the top. Simmer for an additional 3-4 minutes until the chicken is heated through and the flavors meld.

  5. 7

    Garnish and Serve

Sprinkle freshly chopped parsley over the dish before serving. Enjoy your Chicken Marsala!
