Method

Ravioli Preparation

    Prepare the Butternut Squash

    Preheat the oven to 400°F (200°C). Cut the butternut squash in half and scoop out the seeds. Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes until tender. Once cooled, scoop out the flesh and mash it until smooth.

    Make the Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs. Mix until a dough forms. Knead for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Filling

    In a bowl, mix the roasted butternut squash, ricotta cheese, grated Parmesan, nutmeg, and salt until well combined.

    Roll out the Dough

    Divide the dough into four pieces. Roll each piece out thinly on a floured surface. Cut into squares or circles for the ravioli.

    Fill the Ravioli

    Place a small spoonful of filling in the center of each square. Wet the edges with water, fold over, and press to seal. Repeat with the remaining dough and filling.

Cooking the Ravioli

    Boil the Ravioli

    Bring a large pot of salted water to a boil. Carefully drop the ravioli into the boiling water and cook for 3-5 minutes, or until they float to the top. Remove with a slotted spoon and set aside.

Grilling the Chicken

    Prepare the Chicken

    Rub the chicken breasts with olive oil, garlic powder, salt, and black pepper.

    Grill the Chicken

    Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side until fully cooked and juices run clear. Remove from grill and let rest before slicing.

Sautéing Mushrooms and Onions

    Sauté the Vegetables

    Heat olive oil in a skillet over medium heat. Add sliced mushrooms and onions, season with salt and black pepper, and cook until softened and browned, about 8-10 minutes.

Making the Sage Cream Sauce

    Prepare the Sauce

    In a saucepan, melt the butter over medium heat. Add the fresh sage leaves and sauté for 1-2 minutes until fragrant. Pour in the heavy cream, add salt and black pepper, and simmer for 5 minutes until slightly thickened.

Toasting the Pita

    Toast the Pita

    Brush pita bread with olive oil and sprinkle with garlic powder. Place on a baking sheet and toast in the oven at 400°F (200°C) for about 5 minutes until crispy.
