Traditional Barnyard Casserole Recipe

Preheat the Oven
Preheat your oven to 375°F (190°C).

Cook the Sausage
In a large skillet over medium heat, cook the pork sausage until browned and fully cooked, breaking it apart with a wooden spoon. This should take about 5-7 minutes.

Mix in the Eggs
In a large bowl, whisk together the fresh eggs. Once the vegetables and sausage are cooked, remove them from heat and allow them to cool slightly before combining them with the eggs. Stir well until mixed.
Assembling the Casserole

Layer the Tater Tots
In a greased 9x13 inch baking dish, spread the tater tots evenly across the bottom.

Add Cheese Topping
Sprinkle the shredded Monterey Jack and Cheddar cheese evenly over the top of the casserole.
Baking

Bake the Casserole
Place the casserole in the preheated oven and bake for 30-35 minutes, or until the cheese is melted and bubbly, and the eggs are set.

Cool and Serve
Once baked, remove from the oven and let the casserole cool for 5-10 minutes before serving. Cut into squares and enjoy!
