Marinating the Chicken

Prepare the Marinade
In a large bowl, combine the buffalo hot sauce, olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Mix well until all ingredients are incorporated.

Marinate the Chicken
Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.
Smoking the Chicken

Prepare the Smoker
Preheat your smoker to 225°F (about 107°C). While it's heating up, soak the wood chips in water for at least 30 minutes.

Remove the chicken from the marinade and allow any excess marinade to drip off. Place the chicken thighs in the smoker and add the soaked wood chips to the smoker box. Smoke the chicken for about 2 to 2.5 hours or until the internal temperature reaches 165°F (74°C).
