Crust Preparation

    Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.

    Press the mixture into the bottom of a 9-inch springform pan evenly. Bake for 8-10 minutes until lightly golden. Remove from oven and let it cool.

Filling Preparation

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

    Add Sugar and Vanilla

    Gradually add 1 cup of granulated sugar and vanilla extract to the cream cheese, mixing until well combined.

    Incorporate Sour Cream and Eggs

    Add the sour cream and mix until smooth. Then, add the eggs one at a time, mixing after each addition until just combined.

    Pour Filling into Crust

    Pour the filling over the cooled crust in the springform pan and smooth the top with a spatula.

    Bake the Cheesecake

    Bake in the preheated oven for 45-50 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

Topping Preparation

    In a small bowl, combine the sliced strawberries, 2 tablespoons of granulated sugar, and lemon juice. Toss gently to coat.
