Preparation of Vegetables

Chop the Cabbage
Remove the outer leaves of the green cabbage and red cabbage. Cut both cabbages into quarters, remove the core, and slice them thinly. You should have about 4 cups of chopped green cabbage and 1 cup of chopped red cabbage.

Grate the Carrot
Peel the carrot and use a box grater or a food processor to grate it finely until you have about 1 cup of grated carrot.
Making the Dressing

Combine Dressing Ingredients
In a large mixing bowl, combine the mayonnaise, apple cider vinegar, granulated sugar, salt, black pepper, and celery seeds. Whisk together until smooth and well combined.
Combining and Serving

Mix Vegetables with Dressing
Add the chopped green cabbage, chopped red cabbage, and grated carrot to the bowl with the dressing. Toss everything together until the vegetables are thoroughly coated with the dressing.

Chill and Serve
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled as a side dish.
