    Place the cherry-wood chips in a bowl of water. Allow them to soak for at least 30 minutes before using. This helps create smoke when the chips are heated.

    While the wood chips soak, lay out the thick-cut bacon strips on a cutting board. Use a sharp knife to cut the bacon strips in half if desired.

    In a small bowl, combine the brown sugar, black pepper, sea salt, garlic powder, and smoked paprika. Mix well to create a seasoning blend.

    Rub the seasoning blend evenly over both sides of each bacon strip. Make sure to coat them well for maximum flavor.

Smoking

    Prepare Smoker

    Prepare your smoker according to the manufacturer’s instructions. Preheat it to 225°F (107°C). If using a charcoal grill, create a two-zone fire for indirect cooking.
