Method

Pudding Preparation

  1. 1

    Combine Ingredients

In a medium saucepan, whisk together the buttermilk, granulated sugar, cornstarch, vanilla extract, and salt until well combined.

  2. 2

    Heat the Mixture

Place the saucepan over medium heat and continue to whisk the mixture as it heats. This will help dissolve the sugar and cornstarch.

  3. 3

    Temper the Egg Yolks

In a separate bowl, lightly beat the egg yolks. Once the buttermilk mixture is hot but not boiling, gradually whisk about a cup of the hot mixture into the egg yolks to temper them.

  4. 4

    Combine and Thicken

Pour the tempered egg yolk mixture back into the saucepan with the remaining buttermilk mixture. Continue to cook, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5-7 minutes.

  5. 5

    Cool the Pudding

Remove the saucepan from the heat and pour the pudding into individual serving cups or a large bowl. Allow it to cool to room temperature, then refrigerate for at least 2 hours until set.

Whipped Cream Preparation

  1. 6

    Prepare the Cream

In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract.

  2. 7

    Whip the Cream

Using an electric mixer, whip the cream on medium-high speed until soft peaks form, about 3-5 minutes.

  3. 8

    Serve

Once the pudding has set, top each serving with a generous dollop of whipped cream before serving.
