Preparation

    Prepare the Brisket

    Trim any excess fat from the brisket, leaving about 1/4 inch of fat for flavor during cooking.

    Make the Rub

    In a bowl, combine kosher salt, black pepper, garlic powder, onion powder, and smoked paprika. Mix well.

    Apply the Rub

    Generously coat the brisket with the spice rub, ensuring all sides are covered. Wrap in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Smoking

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C) using your choice of wood chips for flavor, such as hickory or oak.

    Smoke the Brisket

    Place the brisket on the smoker grates, fat side up. Close the lid and smoke for approximately 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).

    Wrap and Rest

    Once the brisket reaches the target temperature, wrap it in butcher paper or aluminum foil and let it rest for at least 1 hour.

Serving

    Slice the Brisket

    After resting, slice the brisket against the grain into 1/4 inch thick slices.

    Serve with BBQ Sauce

    Serve the sliced brisket with your favorite BBQ sauce on the side.
