Method

Preparation of Chicken

  1. 1

    Prepare the Chicken

Rinse the whole chicken under cold water and pat it dry with paper towels.

  2. 2

    Season the Chicken

In a small bowl, mix together olive oil, salt, black pepper, garlic powder, and paprika. Rub this mixture all over the chicken, making sure to get under the skin for maximum flavor.

Smoking the Chicken

  1. 3

    Prepare the Smoker

Preheat your smoker to 225°F (about 107°C). Use your preferred wood chips, such as hickory or apple, for a smoky flavor.

  2. 4

    Smoke the Chicken

Place the seasoned chicken on the smoker and close the lid. Smoke the chicken for about 3-4 hours, or until the internal temperature reaches 165°F (75°C).

Making the BBQ Sauce

  1. 5

    Combine Ingredients

In a saucepan over medium heat, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

  2. 6

    Simmer the Sauce

Stir the mixture well and bring it to a simmer. Let it cook for about 10-15 minutes until it thickens slightly.

Finishing Touches

  1. 7

    Baste the Chicken

During the last 30 minutes of smoking, baste the chicken with the prepared BBQ sauce.

  2. 8

    Serve

Once the chicken is done smoking, remove it from the smoker and let it rest for 10 minutes before carving. Serve with remaining BBQ sauce on the side.
