Prepare the Pie Crust
In a large bowl, combine the all-purpose flour, salt, and granulated sugar. Mix well.

Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overwork the dough.

Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Apple Filling
In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, lemon juice, cornstarch, and vanilla extract.

Toss well until the apples are evenly coated with the sugar and spice mixture.

Let the filling sit for about 15 minutes to allow the flavors to meld.
Assembling the Pie

Roll Out the Dough
Preheat your oven to 425°F (220°C). Roll out one disc of dough on a floured surface to fit your pie pan.

Transfer the rolled dough into the pie pan, pressing it gently against the sides.

Pour the apple filling into the crust, spreading it evenly.

Dot the filling with small pieces of unsalted butter.

Roll out the second disc of dough and place it over the filling. Seal the edges by crimping them together. Cut slits in the top crust for steam to escape.
Baking the Pie

Egg Wash and Sugar Sprinkle
Brush the top crust with the beaten egg and sprinkle granulated sugar over the top.

Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
