Fish

Salsa Verde

Tomatillo Sauce

Method

Preparation

  1. 1

    Prepare the Fish

Rinse the branzino under cold water and pat dry with paper towels. Drizzle with olive oil, and season the inside and outside with salt and black pepper. Slice the lemon in half.

  2. 2

    Make Salsa Verde

In a bowl, mix together the chopped parsley, capers, minced garlic, lemon juice, and olive oil. Stir until well combined and set aside.

  3. 3

    Make Tomatillo Sauce

In a blender, combine the tomatillos, jalapeño, cilantro, lime juice, and salt. Blend until smooth. Adjust seasoning to taste.

Grilling

  1. 4

    Grill the Fish

Preheat the grill to medium-high heat. Place the branzino on the grill and cook for about 6-8 minutes on each side, or until the flesh is opaque and flakes easily with a fork.

  2. 5

    Grill the Lemon

During the last few minutes of grilling the fish, place the lemon halves cut-side down on the grill and grill until charred, about 2-3 minutes.

Serving

  1. 6

    Serve

Remove the fish from the grill and place on a serving platter. Drizzle generously with salsa verde and tomatillo sauce. Serve with grilled lemon halves on the side.
