Prepare the Chickpea Puree

Blend Ingredients
In a blender or food processor, combine the canned chickpeas, smoked paprika, garlic cloves, tahini, lemon juice, olive oil, salt, and black pepper.

Adjust Consistency
Blend until smooth and creamy. Add a little water if necessary to reach desired consistency.
Cook Baby Broccoli

Boil Water
Bring water to a boil in a large pot and add a pinch of salt.

Blanch Baby Broccoli
Add the baby broccoli to the boiling water and cook for 3-4 minutes until tender but still vibrant green.

Shock and Drain
Drain and immediately transfer to ice water to stop the cooking process. Drain again after a few minutes.
Serve

Plate and Serve
On a serving plate, spread the smoky chickpea puree and top with the blanched baby broccoli. Drizzle with a little olive oil and additional lemon juice if desired.
