Method

Prepare the shrimp

    Rinse and pat dry

    Rinse the shrimp under cold water and pat dry with paper towels.

    Season and sear

    Toss the shrimp with a pinch of salt and pepper. Heat a skillet over medium-high heat and add 1 tablespoon olive oil. When shimmering, add the shrimp in a single layer and sear 2–3 minutes per side until opaque and pink. Transfer to a plate and keep warm.

Prepare the toppings

    Avocado topping

    Halve one avocado and dice the flesh. In a bowl, lightly mash the avocado, leaving some chunks. Squeeze a little lime juice over it and season with a pinch of salt.

    Tomato-onion-cilantro mix

    In another bowl, combine the remaining diced onion, tomato, chopped cilantro, and the juice of half a lime. Add a pinch of salt and toss to combine.

Toast and assemble

    Toast tostadas

    Preheat the oven to 350°F (175°C). Place corn tostadas on a baking sheet and bake 5–7 minutes, or until crisp and lightly browned.

    Assemble

    Spread a layer of mashed avocado on each tostada. Top with several shrimp, then spoon the onion-tomato-cilantro mixture over the shrimp. Finish with a squeeze of lime and a light pinch of salt.
