Directions

  1. 1

    Make tomato sauce

In a saucepan, heat 1 tablespoon olive oil over medium heat. Add onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook 1 minute more. Stir in tomato sauce, chili powder, cumin, paprika, salt, and pepper. Simmer gently for 10-12 minutes to thicken and develop flavor.

  2. 2

    Season shrimp

In a bowl, toss shrimp with chili powder, cumin, paprika, and minced garlic, plus a pinch of salt. Add lime juice and toss to coat. Let sit 5 minutes to meld flavors.

  3. 3

    Cook shrimp

In a skillet, heat 2 tablespoons olive oil over medium-high heat. Add seasoned shrimp and cook 1-2 minutes per side until pink and opaque. Remove from heat.

  4. 4

    Warm tortillas

In a clean skillet, warm the corn tortillas about 30 seconds per side until pliable. Keep wrapped in a clean towel to stay warm.

  5. 5

    Prepare avocado and garnish

Slice avocado and chop cilantro. Slice lime into wedges for serving. Set everything near the tortillas for easy assembly.

  6. 6

    Assemble tacos

For each tortilla, add 2-3 shrimp, spoon some tomato sauce over, top with avocado slices, and garnish with cilantro. Squeeze a lime wedge over the taco and serve immediately, with extra lime wedges on the side.
