Cook the shrimp
Fill a large pot with salted water and bring to a boil. Add the shrimp and cook until pink and just opaque, about 2–3 minutes. Drain and chill. Reserve 1/2 cup of the cooking liquid as shrimp juice for the sauce.

Make the cocktail sauce
In a bowl, whisk ketchup, prepared horseradish, lemon juice, Worcestershire sauce, and hot sauce. Whisk in the shrimp juice to reach your desired sauce consistency. Season with salt and pepper to taste.

Prepare vegetables and avocado
Dice the avocados, slice the cucumber into half-moons, halve the cherry tomatoes, and finely dice red onion and celery.

Chill and assemble
Chill the sauce and shrimp until cold. Arrange serving portions by layering a base of avocado and veggies, topping with shrimp, and drizzling with cocktail sauce. Finish with a sprinkle of fresh dill for aroma.
