Prepare shrimp and aromatics
Cut the shrimp into bite-sized pieces about 1/4 inch dice. In a glass or stainless-steel bowl, combine shrimp with 1/2 cup lime juice and 1/4 cup orange juice.

Cure the shrimp
Cover and refrigerate for 20-30 minutes until the shrimp turn opaque and firm.

Add vegetables and herbs
To the marinated shrimp, add finely diced red onion, minced jalapeño, diced tomatoes, cucumber (if using), and chopped cilantro. Stir gently to combine.

Season
Season with salt and black pepper to taste, then adjust acidity with additional lime juice if desired.

Add avocado
Gently fold in the diced avocado just before serving to avoid mashing it.
