    In a pan, heat cooking oil over medium heat. Once hot, carefully add gyoza wrappers and fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

    In a food processor, combine the English peas, avocado, lime juice, salt, and cilantro. Blend until smooth but still slightly chunky. Adjust seasoning as needed.

    Prepare the Tuna Poke

    Dice the sushi-grade tuna into small cubes. In a bowl, mix the tuna with soy sauce, sesame oil, finely chopped jalapeño, and truffle oil. Let it marinate for about 10 minutes.

    Take a crispy gyoza shell and fill it with a spoonful of English pea guacamole, followed by a generous portion of the marinated tuna poke. Top with paddlefish caviar.
