Prepare the Gyoza
In a pan, heat cooking oil over medium heat. Once hot, carefully add gyoza wrappers and fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Prepare the Tuna Poke
Dice the sushi-grade tuna into small cubes. In a bowl, mix the tuna with soy sauce, sesame oil, finely chopped jalapeño, and truffle oil. Let it marinate for about 10 minutes.

Assemble the Tacos
Take a crispy gyoza shell and fill it with a spoonful of English pea guacamole, followed by a generous portion of the marinated tuna poke. Top with paddlefish caviar.

Serve the tuna poke tacos immediately, garnished with additional cilantro if desired.
